Thyme jam.
Jam from forest fairies!
-80 g thyme flowers
-1 lemon
-500 ml of water
-5 g pectin (for a denser consistency, take 7-8 g)
-200 g sugar
Grate lemon zest, squeeze juice. Heat water with sugar until sugar melts. Bring to a boil, add zest and juice. Cook on a medium heat for 5 minutes. Add thyme flowers and cook for 25 minutes.
Strain through a sieve, return to the fire. Mix pectin with a spoon of sugar
and pour into thyme broth, stirring constantly. Cook for 2-3 minutes.
Pour into jars. The jam will be liquid at first, but will thicken as it flows.
Heather flowers can also be used for this jam!
